When I’m really hungry and didn’t plan well, this pizza satisfies within minutes. It’s an effortless way to hush those cravings quickly.
First, toss about one cup of mozzarella cheese in a small non-stick pan. Make sure it’s a non-stick. I tried it once on a pan that wasn’t and the results were not pretty!
Once the cheese starts to melt, add the topping of your choice, but I highly recommend pepperoni for that real pizza taste. I also like to add a few chopped jalapenos (from a jar). That’s it! Note – you can add a tbsp of pizza sauce before the pepperoni, but I just really love the cheese and don’t want to add any needless carbs.
The cheese will continue to melt and start to harden on the bottom. I like to take my spatula and nudge around the edges to be sure it is sliding a bit on the pan. When it seems stiff enough and there is some browning around the edges, simply slide it onto a plate.
